Chef Henry Kibit started Bunny Belly at the McMinnville Farmers Market, selling small-batch bagels from a stall. They caught on fast enough to justify a storefront, and the shop opened on Historic Third Street in 2025, next door to HiFi Wine Bar.
The method is the whole pitch. Bagels are hand-rolled, center-punched — the belly button method, hence the name — and boiled before baking, which is the traditional technique most places skip because it’s slow. What comes out has the chew a bagel is supposed to have.
Beyond the plain rounds there are schmears and bagel sandwiches, with the kind of flavor combinations that come from a chef rather than a bakery. Coffee is Extracto, roasted in Portland.
It’s a straightforward morning stop in a town that could use more of them, and it sits right in the middle of Third Street among the tasting rooms and shops.
It’s a small shop and a morning operation. Fine for grabbing a bag to take with you.
