Seufert Winery

A boutique winery founded in 2005 by Jim Seufert, a fourth-generation Oregonian, specializing in single-vineyard-designated Pinot Noir. Seufert developed his interest in wine while traveling major producing regions for work, then began making wine in the McMinnville AVA with help from Randy and Kim Coleman at Coleman Vineyard. He owns no estate vineyard, instead buying fruit from around a dozen growers committed to quality and sustainable practice — sites that have included Bishop Creek, Coleman, Hawks View, Johan, Momtazi, Oak Springs, Yamhill, and Zenith.

Production runs under 1,000 cases annually, with a light-handed, minimal-intervention approach intended to let each vineyard’s character show. The Black Label line, introduced in 2006, blends and ages the best lots of each vintage. The range has expanded beyond Pinot Noir to include whites, sparkling, other reds, and verjus.

Michelle Seufert runs hospitality, having worked in New York’s culinary and nightlife scene across hospitality, event planning, and food and beverage operations before returning to Oregon. The downtown Dayton tasting room offers customized flights paired with house-made bites built around seasonal local fare, at $30 per person waived with a two-bottle purchase. The Single Vineyard exploration — three Pinot Noirs from distinctly different terroirs poured side by side, with pairing bites — runs $40, waived with one bottle. There’s a courtyard overlooking the park and a gift shop alongside. The winery also offers lodging at three properties, from a two-guest bungalow to a historic house sleeping sixteen.
